Have you ever had a KIND bar? They're truly candy in fruit + nut bar form. Delicious! I knew that with a simple ingredient list on each bar's package, these bars wouldn't be too hard to recreate at home.
I haven't bought a KIND bar since. These are SO easy - all that's really required of you is chopping the nuts, mixing them in a bowl with honey and forming them into bars. Really. That's it.
Because there's so little effort required in making these, I turned on my favorite movie and got lost in the dialogue I know by heart but still could watch every day. Listen to this while you cook for the full effect.
If you're like I am and need a mid-morning snack (or a snack anytime, honestly), go ahead and make a batch of these. You'll never look back.
Honey Nut Bars (from here)
- 1 cup cashews
- 1/2 cup almonds
- 1/4 cup pecans
- 1/4 cup walnuts
- 1/2 cup unsweetened shredded coconut
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 9 tbsp raw honey
Preheat your oven to 350 degrees and line an 8x8 glass dish with parchment paper, leaving enough extra paper to make flaps on all sides. Roughly chop all nuts and combine in a bowl with all remaining ingredients except honey.
Pour honey into the mixture and stir with a fork until all the nuts are evenly coated. Spread the mixture into the dish and press down to pack it in to make it into an even square. Bake for 20 minutes and remove from the oven. Use the parchment paper to press the bars down again for a more compact bar. After the bars have cooled in the pan for about 30 minutes, lift the bars out with the parchment paper and flip upside down, so that the top of the bars is now the bottom. Peel the paper, cut into squares and enjoy!
